Coffee and Molasses Marinated Pork Chops

My husband spent five days sanding and re-painting our deck; so it only seemed fitting to have friends over on Memorial Day weekend to show it off and do a little grilling.

I had just bought a fresh bag of Stumbeano’s Jamaican Me Crazy coffee when I came across this recipe for a coffee marinade for pork chops. I couldn’t resist giving it a try with the flavored coffee. It gave the pork a delicious flavor, and everyone loved it – I’ll definitely be using it again!

Coffee and Molasses Marinated Pork Chops

Ingredients

4 pork chops

1 cup strong brewed coffee or Expresso (brewed and then cooled or it will cook the meat)

½ cup dark molasses

1 cloves minced garlic

1 teaspoon salt

1 teaspoon dried Thyme

2 tablespoons apple cider vinegar

Directions

Mix all marinade ingredients well and pour into a resealable bag with the pork chops. Marinate in the refrigerator for at least 3 hours; or overnight if you plan ahead.

Prepare your grill for direct grilling over high heat. If your pork chops are thicker than 1 inch, you’ll want to move them to the cooler side of the grill to finish cooking after you sear the outside.

Remove the pork chops from the marinade and let them come to room temperature for about 30 minutes. This will help the meat cook more evenly.

Put the pork chops on the grill and cook about 5 minutes per side. Again, if they are thicker than 1 inch, move to the cooler side of the grill and close the lid to allow them to cook all the way through. Remove them and allow the pork chops to rest on a platter about 5 minutes before serving.

I served my chops with fruited baked beans, Greek cucumber salad and fresh corn on the cob. It was a simple meal that left plenty of time to chat with friends.
