Jamaican Curry Chicken [UPDATED]

A few years back my husband Tim and I vacationed in Jamaica and found some of their Curry food to be delicious. So I went about and came up with this recipe that I have made many, many times. I usually serve it with steamed vegetables.

Jamaican Curry Chicken

3 boneless chicken breasts, cut into cubes

1 medium onion

2 cloves garlic, minced

Brown in olive oil

4 small potatoes, cut into cubes

1 can chicken broth

½ C. water

½ C. cream

2 green onions, greens and all

2 Tbsp. curry powder

1 tsp. thyme

Dash salt

Combine chicken and other ingredients. Bring to boil and simmer until potatoes are soft, and it thickens. I mash some of the potatoes to thicken too.

Serve over a bed of rice.
