SOUR CREAM RAISIN BARS [UPDATED]

Sour cream raisin bars have been around a long time.

When  my neighbor mentioned that she was craving

these bars I decided now would be a good time to make

them.  When I brought some over for them, they were

still warm. When I arrived they were about to have dinner.

Later she told me that they had  eaten one

before they ate  dinner.  Just goes to show you dessert

might not make it to the end of the meal

Crust:

1 3 / 4 cup oatmeal

1 3 / 4 cup flour

1 Cup brown sugar

1 cup margarine

1 tsp soda

1 / 2 tsp salt

Mix well and pat two thirds of the crust in a 9 x 13 inch pan.

(sprayed  with oil)

Save 1 / 3 of mixture for the topping

Bake 350 10 minutes

Filling:

2 eggs or 4 egg yolks (slightly beaten)

3 / 4 cup sugar

3 Tbsp. corn starch

2 cups of raisins

2 cups of sour cream

Put into a saucepan and stir constantly over

medium heat until thickened like gravy.

Take off heat and add 1 Tbsp. Lemon juice.

Mix and pour over crust.

Top with 1 / 3 of topping mixture. Crumble

Using your fingers.

Bake at 350 for 20 minutes.
