Mircrowave Coffee Cup Chocolate Cake [UPDATED]

The ingredients are simple and it truly took about 5 minutes from start to finish cooking. I thought the first time I tried it that the cake was a little dense, so I added to the original recipe baking soda and salt, and used a little less oil.
Quick and easy, I think I’m about to become the favorite in the office for those craving fresh snacks and chocolate in the afternoons!
I topped the cake with a little powdered sugar. In the summer you could top with fresh fruit, and for a full dessert at home – serve with ice cream and chocolate syrup.
This recipe makes a ‘cup” cake plenty big enough to share.
Mircrowave Coffee Cup Chocolate Cake
Ingredients:
4 Tbs flour
4 Tbs sugar
2 Tbs cocoa powder
¼ tsp baking soda
¼ tsp salt
1 egg
2 Tbs cooking oil
3 Tbs milk
2 Tbs chocolate chips (optional)
Directions:
Spray the inside of a normal coffee cup with cooking spray. Put the flour, sugar, baking soda, salt and cocoa in the cup and mix well with a fork. Add the egg and blend well. Add in the oil and milk and stir until just blended. Stir in the chocolate chips, if desired.
Put in a microwave (1000 watts) for 3 minutes on high. The cake will appear to be puffing out of the cup, but will not overflow.
Let the cake sit for one minute before gently removing with a fork. Enjoy!
