My husband is in charge of the evening meal on Wednesdays – a deal we made when I decided to take an early evening yoga class. He can whip up a mean omelet in the morning (and does nearly every day), but organizing, checking on groceries and ingredients, and diversifying for dinner is not his strong suite. I had one request – no frozen pizza. So far, I’ve been happily impressed and I think he’s even enjoying it.
This week, he pulled a recipe from his mother’s file, which we acquired when she moved to PioneerCare. The recipe suggests cooking 4-6 hours; he let is simmer for 30 minutes and it was delicious.
Anna Mae’s Beer Cheese Soup
2 cans cream soup (chicken, celery or mushroom)
1 can beer
1 lb cubed cheddar cheese
1 can cheddar cheese soup
1 tsp Worchestershire sauce
1/4 tsp paprika
Mix all together, let simmer 4 to 6 hours in a crockpot. Stir occasionally.
