Asian Chicken, Noodle and Snap Pea Salad [UPDATED]

This is a super easy, flavorful and convenient recipe to keep you out of the kitchen on warm evenings. Most of these ingredients can be kept on hand. I like to buy rotisserie chickens, shred them and freeze by the cupful. Just for kicks, I roasted the red pepper on a grill pan – jarred red peppers would also work and be handy. Make this several hours before serving so the ingredients can marinate in the dressing.

 

Asian Chicken, Noodle and Snap Pea Salad

3 oz uncooked soba or whole wheat spaghetti (I used whole wheat spaghetti)

1 8-oz pkg sugar snap peas

1 red bell pepper, thinly sliced

3 cups shredded rotisserie chicken

1/2 cup light sesame-ginger dressing (my choice was Newman’s Own)

Toasted sesame seeds

Sliced green onions (optional)

Shredded lettuce or napa cabbage

 

Prepare soba (noodles) according to pkg directions, drain and rinse with cold water. Microwave peas, drain and rinse with cold water Combine soba, peas and next 3 ingredients in large bowl. Toss to combine. Garnish with sesame seeds & onions. If desired serve over lettuce or cabbage.
