Light Cranberry Apple Salad [UPDATED]

You will enjoy this light salad – it was such a pleasant surprise.  It is light and tasty. We served the craisins and cashews
on the side.  You can make this and serve  it right away. Would be good any time of the year.

Light Cranberry Apple Salad

l bag of romaine lettuce (chop)
10 oz bag of spinach     (chop)
2 apples , chopped , not peeled
1/2 pkg of craisins (dehydrated cranberries)
1/2 cup of cashew pieces
4 0z finely shredded mozzarella cheese
Dressing:
1  T.  poppy seeds
3/4 cup sugar
1/3 cup  apple cider
1 tsp. salt
1 cup olive oil
1 tsp dry mustard
Mix dressing ingredients well , toss with salad and serve.
