Healthy Yummy Oatmeal Craisin Cookies
Published 1:51pm Wednesday, October 24, 2012If you are watching carbs and calories, this is a perfect sweet treat that is so easy to make. It starts by making a few healthy pantry choices. Once you have these ingredients on hand, they can then be substituted in your other favorite recipes. The healthy substitutes in this recipe- HeartSmart Bisquick; Brown Rice Flower; Smart Balance Butter Sticks (a blend of real butter and Smart Balance Spread); Truvia; and Splenda Blend Brown Sugar- are all available at Walmart and your local grocery store. Stevia is a natural, plant based, zero calorie sugar substitute. It is about twice as sweet in baking as cane sugar, so you only need half as much when substituting it in a recipe. I don’t use much Splenda, but include the blend for the brown sugar taste. The cookies are very moist and cake-like because of the applesauce.
Directions:
Heat oven to 350
Ingredients:
¼ c smart butter softened
1/3 c brown sugar blend
¼ c stevia
1 egg
2/3 c unsweetened applesauce
1 ¾ c heart smart bisquick
¼ c brown rice flower
½ c oatmeal
2 teaspoons cinnamon (or 1 teas cinnamon and 1 teas pumpkin spice)
1 cup craisins (or you can use raisins or chopped apples
Cream butter, sugars and egg.
Stir in all other ingredients.
Spray cookie sheet with nonstick cooking spray
Drop by tablespoon on cookie sheet .
Bake 15 minutes on center rack. Cookies will be light brown around bottom edges
Makes about 26 cookies
Total prep time is less than half an hour!
