This is the season for bright, sweet watermelon — here’s a delightful way to use this special summer ingredient. Use a fruity olive oil and a flavored balsamic, if you have them. I used Blood Orange Olive oil and Blackberry Ginger balsamic vinegar, both from the Stillwater Olive Oil Company. I have made this salad with plain oil and balsamic as well and it was also delicious.

Arugula, Watermelon, and Goat Cheese Salad
Salt/Pepper to taste
4-5 oz. goat cheese, crumbled
1-2 T. balsamic vinegar
Put arugula in large bowl, add olive oil, salt, pepper and toss the greens. Divide among 6 salad plates. Top with remaining ingredients, dividing among the six salads. Drizzle each salad with a bit of balsamic vinegar. Serve immediately, eat and enjoy.
