Homemade GranolaPublished 9:53am Thursday, November 7, 2013
This comes from Bernice Overland! Our daughter has now started hockey and proclaimed to me one day “I am going to start to eat healthier”. So when a friend of mine brought me a taste of her homemade granola, I was all over her to get the recipe. I thought it was very tasty, even though my friend’s husband thought not and did not care to snack healthy. I know the homemade granola will be a hit in our household with our daughter and friends!
2/3 C. honey
1/3 C sugar
5 cups oatmeal (quick cooking or regular)
1 C roasted almonds, roughly chopped-I used one can Blue Diamond
1 C sunflower seeds
1 C dried cranberries
1 Tbsp flour
Heat oven to 325 degrees. Line large cookie shee with parchment paper, leaving edges hang over. Place butter, honey and sugar in saucepan and cook over medium-low heat until melted, about 3 minutes, remove from heat. In large bowl combine oats, almonds, sunflower seeds, cranberries and flour. Mix. Add butter-honey mixture and mix until all is coated. Press firmly into parchment lined pan. Bake 30 minutes or until lightly browned. Cool and break apart.
