Chocolate cherry cordial cookies

Cookie ingredients:

• 1/2 cup butter, softened.
• 1 cup sugar.
• 1 egg.
• 1 teaspoon rum extract.
• 1-1/2 cup flour.
• 1/3 cup cocoa powder.
• 1/4 teaspoon baking soda.
• 30 maraschino cherries, drained and patted dry.
• Sugar for dusting.

Glaze ingredients:

• 1 cup powdered sugar.
• 1 teaspoon rum extract.
• 4 teaspoons maraschino cherry juice.

Directions:

Beat butter, sugar, egg and extract until light and fluffy. Combine flour, cocoa, baking soda and baking powder and add to butter mixture. Beat well.

Roll about 1 tablespoon of dough into a ball and coat with sugar. Flatten slightly and place cherry in the middle, molding dough around the cherry. 

Bake 8-10 minutes at 350°. Cool on wire rack.

Combine glaze ingredients and drizzle over cooled cookies.
